Musings on Trials in Life, based on James 1
The perfect result of endurance is to be perfect and complete, lacking nothing. I love verse 5: if you are lacking wisdom, ask of God, He gives liberally to all who ask Him. My trials are here to perfect and complete me. In the process of my trials, if I need wisdom (if???) I am to ask God, and He promises to give me the needed wisdom. How does He do that? First of all, His Word is here in front of me, filled with HIS wisdom. If I’m praying for wisdom and not reading His Word, I will miss out on His wisdom. Along with reading His Word, I need to be meditating on it, applying it, and praying it back to God. Then through the Holy Spirit’s intervention and leading, I will receive still more of God’s wisdom. When my kids were younger, if they wanted to bake something, I might briefly explain the process to them, and then give them the recipe. If they failed to read the recipe, disaster followed (along with grumbling and complaining)! When they were diligent to read the recipe, to understand it and do what it said, coming to me if they had questions, the recipe turned out to be a successful dessert. Trials will come, that’s a given. Learning to lean upon our Lord and His wisdom will pull us through the trials and we will become better followers of Christ.

Recipe to Share: Pizza in a Skillet

Due to the fact that my oven is still not working, I am learning to be creative! I've adapted the following recipe from a recipe for German Pizza that I once found in a Taste of Home magazine. We had guests on Friday night and they enjoyed it as much as we do.
12 ounces ground beef (or mixture of beef & sausage)
medium onion, chopped
small-medium green pepper, diced
2-3 cloves of garlic, diced small
6 medium potatoes, sliced (if new potatoes, no need to peel them)
sliced black olives, sliced mushrooms and chopped pepperoni to taste
1-2 cups tomato sauce
2 cups shredded cheddar or mozzarella cheese
In a 12 in. cast iron skillet, brown beef with onion, green pepper, garlic and salt and pepper to taste. Drain fat, and sprinkle meat with ¼ cup flour (or 2 tablespoons of corn starch if you are gluten intolerant). Place skillet over low heat until the flour or corn starch is absorbed. Stir and remove meat mixture from skillet – set aside. Add oil (I prefer olive oil) to skillet and fry potatoes (with salt and pepper to taste) until done. Spread the meat mixture over the potatoes. Add olives, mushrooms and pepperoni according to your tastes. Top this with the tomato sauce and cheese. Cook, covered, about 10 minutes, until cheese begins melting. Place under the broiler to brown the cheese - about 5 minutes. Cut and serve. 4-6 servings.
